Ingredients
2 cups Flour
1 cup Sugar
½ cup Coconut or Vegetable Oil
1 Lemon zested
¼ tsp Vanilla Paste
1 tsp Baking Powder
2 Eggs
½ tsp. Salt
½ tsp. Baking Soda
1 cup Tri-Berry Greek Yogurt, Crème Fraiche or Sour Cream
6 oz. Blackberries
6 oz. Raspberries
1 cup sliced Strawberries
Streusel Topping:
2 Tbsp. melted Butter
1/2 cup Flour
½ cup Brown Sugar
¼ cup Oats
Optional:
Maple Syrup or Huckleberry Syrup
Powdered Sugar

Preparation
Preheat oven to 400 and spray an 9×13 glass baking dish with non-stick cooking spray.
Combine ½ cup flour, ½ cup brown sugar, ¼ cup oats and 2 Tbsp. melted butter together for streusel topping. Set aside.
Cut strawberries into fourths or slice.
Mix
Sift or whisk together 2 cups flour, baking powder, baking soda and salt. In another bowl whisk together sugar, oil, vanilla paste, eggs, yogurt, crème fraiche or sour cream and lemon zest until well combined.
With a spatula mix dry ingredients into wet ingredients until combined. Fold in blackberries, raspberries and strawberries.
Cook
Pour mixture into glass baking dish, evenly top with streusel and bake for 30 – 35 minutes until batter is set.
Spoon or cut out and serve with hot maple or huckleberry syrup and powdered sugar.
