Ingredients
8 cups finely chopped Kale
24 Cherries
2/3 cup Pumpkin Seeds
4 oz. Goat Cheese
4-5 cups Mixed Greens
1 Tbsp. Lemon Juice
2 Tbsp. Canola or Light Olive Oil
Salt
Pepper

Preparation
Remove hard stems from kale and chop finely. Remove pits from cherries either by cutting them in half and manually removing the seed or remove with a cherry pitter and then cut the cherries in half.
Toast the pumpkin seeds in a dry skillet over medium-high heat.
Combine lemon juice and oil in a small mason jar and shake until combined.
Assemble
Add lemon juice and oil to the kale and massage into the kale with your hands. Add a small pinch of salt and pepper to the kale and mix. This can be done up to 4 hours before serving.
Add cherries, toasted and cooled pumpkin seeds and crumble goat cheese over the top.
