Ingredients
1 small Seedless Watermelon
½ large Cantaloupe
1 Mango
Pico:
¾ cup Chopped Mix Color Tomatoes
¾ cup Chopped Onion
¾ cup Cilantro
½ medium Jalapeno
1 large Lime
Salt
Pepper
¼ cup Feta

Preparation
Chop tomatoes, onion, cilantro and jalapeño.
Remove rind from watermelon, cut watermelon into flat, square slices about 1/8 – 1/4 inch thick. Remove peel from cantaloupe and cut into half rings about the same thickness. Remove skin from mango, cut away from the large seed and slice into the same thickness as the melons.
Pico de Gallo
Mix chopped tomatoes, onions, jalapeno, cilantro and the juice of 1 lime together. Add a pinch of salt and pepper.
Assembly
Layer the watermelon and melon slices. Add slices of mango around platter, evenly top salad with pico and crumbled feta.
