Ingredients
Crust:
8.8 oz. Biscoff Cookies
3 Tbsp. Butter
Cheesecake:
4 blocks Neufchatel Cheese or Cream Cheese
1 cup Sugar
½ cup Sour Cream
2 tsp. Vanilla Extract
3 Eggs
Apples for Cheesecake:
1 Apple
3 Tbsp. Butter
¼ cup Sugar
½ tsp. Cinnamon
¼ tsp. Nutmeg
1/8 tsp. Cloves
Topping:
1 cup Flour
1 cup Brown Sugar
Pinch Salt
8 Tbsp. Butter
½ cup Pecans, chopped
12 Biscoff Cookies

Preparation
Preheat oven to 375, line cookie sheet with foil and spray with
non-stick cooking spray. Run Biscoff
cookies for crust hrough food processor, chop pecans, small chop apples, crumble
12 Biscoff cookies for topping and ensure Neufchatel cheese is at room
temperature.
Crust
Melt 3 Tbsp. butter and combine with processed Biscoff cookies. Press into the bottom of a spring form pan
and bake for 12 minutes. Set aside and
cool.
After the crust has cooled, wrap spring form pan in foil about halfway up the pan. Set spring form in a pan large enough for spring form and deep enough to add water halfway up the spring form pan to bake.
Change oven setting to 325.
Apples
Melt 3 Tbsp butter in a skillet and add apples, sugar, cinnamon, nutmeg
and cloves. Cook on medium to medium
high until apples are soft.
Remove from heat and cool completely.
Topping
Melt 8 Tbsp. butter and then combine with flour, brown sugar, pinch of
salt, chopped pecans and crumbled Biscoff cookies. Evenly spread on cookie sheet and bake for 15
minutes. Remove from oven and set
aside.
Cheesecake
In the bowl of a stand mixer cream together Neufchatel cheese, sour
cream and sugar until well combined. Add
eggs one at a time ensuring they are fully mixed and then add vanilla. Remove bowl from mixer and stir in apples by
hand. Add cheesecake mixture to
springform pan, fill pan that springform is sitting in halfway up the height of
the springform with water and bake on 325 for 1 ½ hours.
Turn oven off, crack door and leave cheesecake in oven as it cools.
Remove from oven and let refrigerate for at least 4 hours.
Before serving top with all the topping, remove springform ring, cut and serve.
