Ingredients
Cookies:
1 cup Butter
1 cup Sugar
1 cup Brown Sugar
2 Eggs
1 tsp. Vanilla Extract
3 cups Flour
1 tsp. Baking Soda
1 tsp. Salt
2 cups Oats
2 tsp. Cinnamon
Apples:
3 Apples
¾ cup Brown Sugar
¾ tsp. Cinnamon
6 Tbsp. Butter
1 ½ cups Apple Cider or Apple Juice

Preparation
Preheat oven to 350 and spray cookie sheets with non-stick cooking spray.
Chop the apples into small pieces.
Apples
In a large skillet, over medium high heat, add 6 Tbsp. butter and melt. Once melted add apples, brown sugar, cinnamon and apple cider. Cook until apples are tender, and mixture is very thick.
Cookies
In the bowl of a mixer cream together butter, sugar and brown sugar until light and fluffy. Add in eggs one at a time until incorporated and add vanilla. In a separate bowl whisk or sift together flour, soda, salt oats and cinnamon. Add to the mixer and mix until just combined. Let the dough rest in the refrigerator for half an hour.
After dough has been in the refrigerator use a 1 Tbsp. scoop to scoop cookies onto baking sheet, slightly flatten and put an indent in the middle of each cookie with your thumb.
Bake for around 15 minutes. Remove from oven, make sure indents are still present in the middle of each cookie, cool cookies and fill each with some of the apple filling.
