Ingredients
½ cup Butter
1 cup Brown Sugar
1 Egg
½ tsp. Vanilla Extract
1 cup Flour
½ tsp. Baking Soda
½ tsp. Salt
1 cup Oats
1 tsp. Cinnamon
1 cup Toffee Chips plus more for topping

Preparation
Preheat oven to 350, line cookie sheets with parchment paper and spray
with non-stick cooking spray.
Cookies
In the bowl of a mixer cream together butter and sugar until combined
and then add the egg, mix well and finally add vanilla. In a separate bowl whisk or sift together
flour, baking soda, oats, cinnamon and salt.
Add to the mixer and mix until just combined. Add toffee chips and quickly mix in.
Scoop cookies, with a 2 Tbsp. size scoop, onto the baking sheets, slightly flatten, top with more toffee chips and bake for 12 – 15 minutes. Remove from oven and cool on pans for 5 minutes then move to cooling racks to finish cooling.
Note: The 2 Tbsp. scoop will give you 14 cookies. If you want smaller cookies use a 1 Tbsp. scoop and get up to 28 cookies.
