Ingredients
1 cup Sliced Red Potatoes
6 Eggs
½ cup Crème Fraiche
½ cup Chives
¾ tsp. Salt
½ tsp. Pepper
½ cup Gruyere
2 oz. Smoked Trout

Preparation
Preheat oven to 400 and spray a pie plate with non-stick cooking spray. Slice potatoes and chives. Check trout for bones, break apart and shred cheese.
Frittata
Lay potatoes in a single layer on the bottom of the pie plate. In a bowl whisk together eggs, crème fraiche, chives, salt and pepper. Stir in trout and half of the cheese. Pour over potatoes and top with the other half of the cheese. Bake for 30 – 40 minutes or until set but slightly loose in the middle. Remove from oven and cool for about 5 minutes.
