Ingredients
Burgers:
1 lb. Ground Chicken Breast
2 Tbsp. Vegetable Oil
3 Tbsp. finely chopped Celery (approximately 2 stalks)
3 Tbsp. finely chopped Green Onion (approximately 2)
¼ cup Golden Raisins
2 tsp. Curry Powder
1 tsp. Salt
¾ tsp. Pepper
¼ cup Major Grey’s Chutney
2 Tbsp. Mayonnaise
Other:
Almond Butter
Brioche Buns
Butter Lettuce

Preparation
Chop celery and green onion. Whisk together chutney, mayonnaise and curry powder. Separate 8 lettuce leaves and set aside.
Burgers
In a skillet add vegetable oil over medium heat and start to warm. Add green onions, celery, salt, pepper and raisins and cook until celery is soft. The heat may need to be reduced to medium to avoid burning. Once soft remove from heat and cool.
In a bowl combine ground chicken, chutney, curry, mayonnaise and cooled vegetables. Mix well and form into 4 even size patties.
In a skillet or on a grill pan cook burgers approximately 4-5 minutes on each side.
Buns & Assemble
Turn oven onto broil and place buns on oven rack with the insides facing up. Broil until the buns are toasted and browned, remove from oven and cool.
Once cooled place approximately 1 ½ tsp. of cashew butter on each side of the bun. Top bottom bun with burger, top with lettuce and finally the top bun and serve.
